Diamante is pleased to announce the addition of a new organic farm recently planted between the Lagoon and the Dunes Residence Club. Featuring over three acres of fruits and vegetables, the fresh and pesticide-free produce will be featured prominently on Diamante menus and also available for purchase at the gourmet deli. The farm is a perfect compliment to our organic herb garden adjacent to the Dunes Clubhouse which is already in use by our restaurant staff.
The farm consists of over 200 orchard trees including olive, mango, passion fruit and banana trees. The rows in between the trees are planted with seasonal vegetables including tomatoes, beans, peppers, onions, and more.
Diamante is working with world-renowned organic expert and agricultural engineer, Enrique Silva, owner of Huerta Los Tamarindos in San Jose del Cabo, as well as the chef /owner of Tequila Restaurant, also located in San Jose del Cabo. Mr. Silva started organic farming for his own restaurants when faced with the difficult task of finding local, fresh organic produce. “We are thrilled about the addition of this farm, with its sustainable farming practices, and the benefits of organic fine dining it offers to our members,” said Diamante Founder and CEO Ken Jowdy.
